The Mediterranean diet is an infinite source of recipes which are health beneficial. In this salad we give importance to using canned mackerel, an economical blue fish which is full of nutrients such as Omega 3 acids that improve your cardiovascular system and reduce cholesterol.😀

Serves for 2 Easy 15 min.
• 1 romaine lettuce • Lambs lettuce • 2 boiled egg • 1 tinned mackerel in olive oil • 1 carrot • 1 salad onion • ¼ red cabbage • White asparagus • Green olives • Basil • 3 tablespoon extra virgin olive Oil • 1 tablespoon vinegar • Salt and black pepper
M E T H O D
1. Prewash the romaine lettuce and the lamb lettuce. Then place both lettuce on a plate adding the grated carrots, sliced boiled eggs, salad onion and red cabbage.
2. Serve with the white asparagus, the green olives and the tinned mackerel.
3. For the dressing, use the olive oil from the tinned mackerel and whisk with extra virgin olive oil, vinegar, salt and black pepper. Finally, for aesthetic add some basil leaves which will give the salad a mediterranean flavour.
