I N G R E D I E N T S
Serves for 2 Easy 20 min.
• 200 gr organic feta cheese • 2 tbsp extra virgin olive oil • ½ lemon (zest and lemon juice) • 1 garlic clove (optional) • Thyme or oregano • 4 Little gem lettuce leaves • 1 big carrot • 4-6 cherry tomatoes • 1 celery stick • 4-6 radish
M E T H O D
1. Mix in a blender or food processor the garlic clove, ½ tsp lemon zest, lemon juice, olive oil and the feta cheese. Simply combine all the ingredients and process until it is creamy and smooth. Place the cream on a bowl and spread the thyme or oregano.
2. Peel, wash and cut into medium sticks the carrot and the celery. Wash the cherry tomatoes, the radish and lettuce leaves. 3. Serve the veggies with the feta dip and garnish with lemon slices and celery leaves. Enjoy!
TIPS AND IDEAS:
For a veggie recipe, simply add tofu instead of feta cheese. Some of my favourite raw veggies for dipping are also red peppers, cucumber and chicory leaves.😋
