SOBA NOODLES STIR FRY With prawns, beef, cashews and veggies.

Soba Noodles are original from Japan and they are made with buckwheat, a cereal that is gluten free, rich in protein and fiber. The perfect alternative to wheat pasta!

I N G R E D I E N T S 

Serves for 2 Easy 30 min.

• 100 gr soba noodles • 1 beef fillet • 10 peeled prawns • 1 carrot • 1 courgette • ½ red onion • Shiitake or mushrooms • 1 handful of cashew • 1 garlic clove • ½ tsp grated ginger • Soya sauce • Extra virgin olive oil • Baby Spinach • Sesame seeds • Pickled red cabbage

M E T H O D

1. Cook the soba noodles according to the package. Drain, then rinse with cold water. Set aside. Meanwhile, cut the beef into chunks and marinate it in a bowl with one tbsp of soya sauce, chopped garlic and ginger

2. Cut all the vegetables into thin strips. Add one tbsp of olive oil in a hot pan and stir all the veggies for few minutes. Set aside. Add the beef and cook until Golden. Add the prawns, the pre-cooked veggies, the soba noodles and stir all together. Add soya sauce to your taste.

3. Finally serve in a large plate and garnish with chopped cashews, sesame seeds, baby spinach , and pickled red cabbage. Meal is ready!

TIPS AND IDEAS:

It is difficult to find 100% buckwheat noodles, so if you are intolerant to gluten prepare this recipe with rice noodles and replace the soy sauce with Tamari sauce.
